Yummy Summer Salad

I’ll admit it: I’m not a fan of salad. I’ve never really liked it but I’m turning over a new leaf (ha ha) and I’m going to train my taste buds to LOVE them. As we all know, salads are super healthy for you. But the dressing will KILL it if you don’t use the right stuff. I found a really yummy Greek yogurt dressing from Bolthouse Farms called Creamy Basil that I used on my salad today. Here’s the recipe!

What you’ll need:
* 2 cups of salad
* 3 pieces of celery
* 4 strawberries
* Handful of almonds
* 3 small bell peppers
* 1/2 of a avocado

I absolutely love listening to music when I’m cooking and baking. It’s the best. I was in the mood for Michelle Branch and rocked out to her while I made my lunch. Making a salad is pretty basic so I’m not going to add directions or anything because chopping, tossing, and adding dressing is a no-brainer. So, here is the end result with the nutrition facts from the Greek yogurt dressing . . . which came out super fast. I swear, I usually don’t put on that much dressing!

After I tossed it all together, I grabbed Sense and Sensibility by Jane Austen while I ate. I’m trying to get through my summer reading list before the end of August. We’ll see how it goes. Anyway, what’s your favorite kind of salad?
